The taste is complex and full-bodied, just like the music of François Servais. Complex with an elegant acidic balance.
Full-bodied with a firm head of foam. The aroma is minimally phenolic, with some vanilla notes from the oak foeders.
Bottled on February 22, 2024. Selection made by Fran and Jos Boon for ’10 years’ Villa Servais. 15% Lambic is from foeder no. 48, and 15% from foeder no. 145. 15% comes from foeder no. 75, which was built in Antwerp in 1890. 55% Lambic is from foeder no. 68, and this foeder is also more than 125 years old.
